Orange and Advocado
This is a salad I like to serve as a starter because it is tangy and refreshing. From a diet point of view advocado has a lot of fat but apparently it is the right type of fat and has omega 3 in it and is good for us as part of a varied diet. Oranges are always a good source of vitamin C and contain lots of fibre. To add an unusual flavour I have sprinkled lots of chopped fresh Tarragon over the top. I love this herbs strong flavour. I also use tarragon in casseroles with beef and vegetables to provide a good flavour.I would also use this salad to go with chicken done with lemons and also fish such as sea bass. I would not serve it with an oily fish as i feel the fat content would be to high.
If I wanted a dressing I would drizzle some wine or cider vinegar over and season with salt and pepper.
