Orange and Avocado Salad


Orange and Avocado Salad is great for a cool refreshing meal or with a curry to cool you down. I just peel and slice an avocado. Peel and slice and orange. Top with olive oil , vinegar and pieces of lemon balm and lemon verbena herb. This adds a great zest. Has anyone got any other good recipes for avocado? that they would like to share or give us a link.

Chicken Salad

Well it seems like an age since I was able to blog but this is a start. Summer hits the UK and it is salad season.
This healthy eating choice is sliced new potatoes, steamed asparagus and green beans, chopped radish, sliced cherry tomatoes,chopped Chinese leaves,chopped green pepper all topped with fried chicken done in olive oil with some fried mushrooms and garlic. A tasty selection. I topped it off with a dressing of wine vinegar , olive oil and Dijon mustard. I think this is simple good to eat and easy to get together, sort of like a stir fry with salad. Serve mushrooms raw if you like.

Winter Salad


I would like to wish everyone who comes to my blog Happy New Year. Winter is really cold this year but I still like a salad. This meal which I think is healthy and nutritious at any time . It is just a straight forward every day meal. Nothing fancy just simple food . Today we had walked 8 miles and this was our refuelling meal. We finished our meal with
some fresh yogurt and Chai tea. The potatoes recharged us and we got lots of good nutrition in this meal. It takes about 10 minutes to make for 2.
The meal has grated carrot salad with satsumas topped with a drizzle of pure maple syrup. I just grated carrots added satsumas and topped with the maple syrup.
The second salad was chopped tomatoes and cucumber peeled topped with a drizzle of balsamic vinegar, really easy.
The third salad was chopped fresh celery, broken walnuts and an eating apple peeled and chopped. I tossed this in natural Greek style organic yogurt and seasoned with salt and pepper.
We had sliced boiled potatoes and a tin of tuna. It would be good with a fresh steak of tuna as well.
If you are on a diet this is a really healthy option for a meal.
This salad would go well with a baked potato ( done fast in the microwave)

Lasagna_and Salad


This weeks meal with a salad was salad with a vegetarian lasagna. We had been out and walked 9 miles on the Ribbleway in Lancashire, so this meal was filling but refreshing.
SALAD
This was made from chopped lettuce, chopped spring onions, black grapes, sliced cucumber, water cress and chopped tomatoes.
I topped it all off with a salad dressing made from olive oil, balsamic vinegar and Dijon mustard. It provided a tangy sharp flavour.
We were so hungry after the walk I could have eaten it all again.

Salmon salad


Salad this week involves getting our weekly dose of omega 3. I use oily salmon fish for this and also linseed oil as part of a salad dressing.

My salad consists of a salad ring of lettuce, spring onions, blueberries, watercress and cucumber.
The inner area has salmon on top of new boiled potatoes.
The salmon was fresh salmon cooked in the oven on a high heat for about 10 minutes. I added some garlic and chilli sauce to the salmon, salt and pepper and a few slices of Chorizo sausage.
I made a dressing for the salad and potatoes from flax oil, red wine vinegar and Dijon mustard to add a good bite .
It was a good combination . This salad would be good as a salad starter to a meal. I would use salmon, chorizo, watercress, blueberries and a garlic and chilli dressing for a starter.

Ham and Corn Salad

Well even though the weather seems to be turning and Autumn is upon us we are still having salads. This is Ham and Corn Salad.
This is a really quick meal.
In the centre of the plate my usual new potatoes and steamed broccoli.
The main salad element is sliced lettuce, mustard cress, yellow sliced pepper, chopped white onion and sugar free tinned corn. I topped with roast ham.
I made a dressing with olive oil, Dijon mustard, salt and pepper and red wine vinegar. Omit the oil or put in less to aim for a weight loss diet.
This salad would be good as a salad starter or as I have had it as main course salad.
